A healthy and flavorful chicken tortilla soup for weight watchers.
Ingredients

- 1 lb boneless, skinless chicken breast
- 1 onion, diced
- 2 cloves garlic, minced
- 1 can diced tomatoes (14.5 oz)
- 4 cups low-sodium chicken broth
- 1 can black beans, drained and rinsed
- 1 cup corn kernels
- 1 tsp chili powder
- 1 tsp cumin
- Salt and pepper to taste
- 1 cup tortilla strips
- Fresh cilantro for garnish
Instructions
- In a large pot, cook the chicken over medium heat until no longer pink. Remove and shred the chicken.
- In the same pot, sauté the onion and garlic until soft.
- Add diced tomatoes, chicken broth, black beans, corn, chili powder, and cumin. Stir to combine.
- Add the shredded chicken back into the pot. Season with salt and pepper.
- Simmer for 20 minutes.
- Serve hot, topped with tortilla strips and cilantro.

- Store leftovers in the refrigerator for up to 3 days.
