Description

A healthy and flavorful chicken tortilla soup for weight watchers.


Ingredients

  • 1 lb boneless, skinless chicken breast
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 can diced tomatoes (14.5 oz)
  • 4 cups low-sodium chicken broth
  • 1 can black beans, drained and rinsed
  • 1 cup corn kernels
  • 1 tsp chili powder
  • 1 tsp cumin
  • Salt and pepper to taste
  • 1 cup tortilla strips
  • Fresh cilantro for garnish

Instructions

  1. In a large pot, cook the chicken over medium heat until no longer pink. Remove and shred the chicken.
  2. In the same pot, sauté the onion and garlic until soft.
  3. Add diced tomatoes, chicken broth, black beans, corn, chili powder, and cumin. Stir to combine.
  4. Add the shredded chicken back into the pot. Season with salt and pepper.
  5. Simmer for 20 minutes.
  6. Serve hot, topped with tortilla strips and cilantro.
