- 1 cup BBQ sauce (Whole 30 compliant)
- 2 cups cauliflower rice
- 1 avocado, sliced
- 1 cup cherry tomatoes, halved
- 1/2 red onion, diced
- 1 tablespoon olive oil
- Salt and pepper to taste
Instructions
- Preheat your grill or oven to medium-high heat.
- Season chicken fillets with salt and pepper.
- Grill or bake chicken until cooked through, about 6-7 minutes per side.
- Brush BBQ sauce on chicken during the last few minutes of cooking.
- Meanwhile, heat olive oil in a skillet over medium heat.
- Add cauliflower rice and cook until tender, about 5 minutes.
- Slice the cooked chicken.
- Assemble bowls with cauliflower rice, sliced chicken, avocado, cherry tomatoes, and red onion.
